Pumpkin Soup
1/2 JAP Pumpkin diced
2 chopped onions
3 cloves of crushed garlic
2 large carrots
1 large potato diced
2 veg stock cubes
One can of coconut cream
Black pepper to taste
Parsley for garnish
Brown onion & garlic in oil in a large heavy-based saucepan
Add diced pumpkin carrot and potato
Cover well with water
Add stock cubes and some pepper
Bring to the boil and simmer until vegetables are soft
Remove from heat
Blend with food processor, or bar mix, until smooth
Stir in coconut cream
Serve and garnish with chopped parsley
